Preheat oven to 425 degrees. Place wire racks in rimmed baking sheets. Place flour, eggs, and bread crumbs in 3 seperate shallow dishes and season each with salt and pepper. Stir cayenne into flour mixture. Coat each tomato slice first in flour, then eggs, then bread crumbs, pressing lightly to adhere. Arrange tomatoes in a single layer on racks and bake until deep golden brown, about 15 minutes, rotating sheets halfway through.
