From The Art of Healthy Eating - kids: grain free low carb reinvented
Place nuts and salt in food processor and grind to a fine powder. Add stevia glycerite and coconut oil and process until "butter" becomes smooth. It will be somewhat liquid but will harden when chilled. Store in an airtight container in the refrigerator.
Tips:
1- Soak and dehydrate nuts to make nut butters. Nuts have a lot of phytic acids and other anti-nutrients in them that are removed of you soak them overnight; this also makes them much more digestable.
2- To make the butter less hard when cold, substitute about half of the oil with cold pressed macadamia nut or hazelnut oil.
