Based on a Shetland Island bannock recipe, these go well with poached eggs for breakfast. Add a little smoked fish for something special
Mix the oats and salt, and add the milk. Stir to amalgamate, and leave overnight (at least 3 hours).
Beat in the eggs and bicarbonate of soda.
Drop large spoonfuls of the mixture onto a hot, lightly buttered pan. The mixture will spread.
Turn them over when they are set on the edge, and bubbles rise. Cook through.
