1/4 ts Salt
6 Eggs; Hard-cooked, chopped
2 ts Lemon juice
1 ts Dried minced onion
1/4 c Mayonnaise
1/2 c Celery; finely chopped
1/4 ts Pepper

Original recipe makes 4



In a bowl, combine mayonnaise, lemon juice, onion, salt and pepper. Stir in eggs and celery. Cover and chill. For each serving, spoon about 1/2 cup onto a lettuce leaf or spread on bread. Try this on a toasted slice of multi-grain bread. It's a hearty lunch.

I added some ground mustard about 1/4 teaspoon or so, a little prepared mustard would also work great, mustard and eggs go excellent together.
