This is an old family favorite Oatmeal Cookie recipe. The secret to this recipe is that you simmer the raisins in water before adding them to the cookie batter so you have nice plump raisins. These are a soft delicious cookie. Try them! :)
Simmer raisins in water until plump about 15 minutes. Drain liquid into a cup and add enough water to make 1/2 cup of liquid. Mix shortening, sugar, eggs and vanilla, stir in liquid. Sift together the dry ingredients ( I just use a wisk) mix the dry ingredients with the shortening etc. Add the oats, nuts and raisins. Drop by rounded teaspoonfuls about 2 inches apart onto ungreased or lightly greased cookie sheet. Bake at 350 degrees for 10 or until golden brown. Depending on size of your spoonfuls. I use a little less than a 2 tablespoon scoop and I make 34 cookies.
