Sift flour. Mix sugar and butter. Beat until creamy. Add 2 or 3 spoons flour and 1 egg. Beat well, and continue adding 2 or 3 spoons flour and 1 egg until all have been added. Then add vanilla, salt and lemon. Bake at 325 degrees for 1 1/4 hours or until a knife inserted in the center of the cake comes out clean.
Optional - Ice with Chocolate Icing.
1 box confectioners sugar sifted. Add 1 1/2 sticks softened butter and a pinch of salt. Then add 3/4 cups cocoa, 2 tsp vanilla extract and 1/2 cup milk. Mix gradually to right consistency. Add one cup of nuts. Spread evenly over cake.

joyings01This recipe was very easy to follow. After reading the reviews, I made a few changes. I used self-rising flour, added an extra 1/2c of sugar, and 1-1/2tsp of vanilla & 1/2tsp of lemon. The edges were thick and delicious and the cake was nice and moist. My family & I loved this cake! I'll definitely be making it again!8m ago

Valerie411Such a great recipe! I used 2 T of lemon juice in place of the lemon extract and topped it with a lemon glaze (1/4 c of sugar melted into the juice of one lemon) and it tastes great!! Next time I'll try less time in the oven, I had some trouble getting the cake out of the pan.1y ago
