Pour mixed cherry gelatin equally into 8 large parfait glasses. Chill 2 hours, or until set.
In a large bowl, dissolve lime gelatin in boiling water. Add 1/2 cup ice cubes and mix until cubes are melted and gelatin is slightly thickened. With an electric beater on low speed, beat in sour cream. Fold in pineapple tidbits and layer evenly over cherry gelatin. Chill for 2 hours or until set.
In a small saucepan, bring apricot nectar to a boil over medium-high heat.
In a medium-sized bowl, dissolve orange or peach gelatin in boiling apricot nectar. Add remaining 1 cup ice cubes and stir until melted. Spoon over lime gelatin layer in each parfait glass, then cover and chill at least 3 hours, or until firm.
Notes: For a fruit-packed parfait, add drained canned apricot halves to the final layer.
