Ready in 1 hour 30 minutes
This soup is hearty and goes well with breadsticks. It is a great stand-alone meal for those with bigger bowls!
Scrub potatoes and use peeler to peel off skin in stripes; Peel and dice onions; Open cans of Broth; Peel Kale leaves from the stalk and lightly chop, discarding the stalks.
In pan, saute Italian sausage until slightly browned. Add crushed red pepper ONLY if a spicier flavor is desired. Drain excess fat and place in bowl. Refrigerate while preparing other ingredients.
In same pan, saute bacon. Remove and crumble; set aside. Save 1 tablespoon of grease and use it to saute the onions, and garlic for approximately 15 minutes or until onions are soft and clear.
In pot, add broth and onion mixture; cook through until boiling on medium high heat.
Add potatoes and kale, cover, and cook on Medium High until soft..about 30 minutes.
Add cream, crumbled bacon, sausage; simmer 4 minutes and serve.
Serving Size: Approximately 1 1/2 cup
I modified this recipe to find that perfect match of the Olive Garden's flavor. This recipe takes a while to prepare, but is worth the time and effort.

Valerie411 1y agoVery good soup! Don't go to Olive Garden much, but thought I would try it because the ingredients sounded tasty! Added green chile because we really like added spice and it tasted great!
Sassytink2012 1y agoEvery time we go to Olive Garden my husband gets this soup till I started making it he says its way better!i even slice the potatoes like Olive Garden does I add more heavy cream to make it more creamier this soup is the best!i make it a lot though lol
julieseeks117 2y agoI have been making this soup for years, it's one of my famiky favorites! I always like reading other people's recipes to see what little variations they added in, if any. I never add bacon to this recipe, I tend to think that the bacon drowns out the other flavors. The rest of the recipe is spot on, except fornthe potatoes and kale segment. The kale gets really soggy and gross if you cook it for that long. My favorite way of adding the kale is right before serving: turn off the heat and put a lid on it for a few minutes until warmed. That way it's flavorful and still crispy.
3joshua3 2y agoWas pretty disappointed. I made it to the exact for 10 servings also. It was too bland. I just felt like it was missing something. I will try it again with more kale, less broth, more cream, hot sausage and potatoes.

LarisaS 2y agoSooo good! Thanks for sharing. I doubled the recipe as like to make enough to have plenty of leftovers. Also used more kale. I actually added some lemon pepper by mistake but it may have actually made it better...so so good. Definatelly a favorite

masonmoose 2y agoThis was GREAT!! I added more potatoes, kale and meat to make it a chunky soup!!! We will be having this again. I thought it was better then Olive Gardens, with it being chunky!!!!
