Suggest a better descriptionCrack the eggs into a cup. Mix thoroughly. Add salt and pepper. Sautee onion and bell pepper and mushroom in separate pan to soften. Pour olive oil in heated cast iron pan. Pour egg in pan, wait until almost cooked all the way. Put veggie mixture and shredded cheese in middle. Fold omelet. Eat it. Smile.
