One pot meal that is high in protein and super easy to make. From the Racing Weight Cookbook.
1- Bring water to a boil in a medium sauce pan over high heat. Add quinoa, bouillon, and garlic. Return to a boil.
2- Cover and reduce heat to low. Set a timer for 15 minutes. When the timer goes off add the chicken, zucchini, sun-dried tomatoes and basil. Cover again.
3- Continue cooking until all liquid has evaporated about another 5-10 minutes.
