Try this One Skillet- Italian Sausage And Harvest Vegetable Stew recipe, or contribute your own.
Preparation time = 20 minutes (plus 45 minutes simmering) Ripe tomatoes may be replaced with 3 14-oz cans of tomatoes - drained and chopped. 1. Slit sausages skins lengthwise with a knife tip. Remove sausage meat and "pinch" into small meatballs. 2. Over medium heat in a large skillet or heavy-bottomed saucepan, heat olive oil. Add sausage and onions; cook for 10 minutes or until nicely browned, stirring frequently as you prepare carrots and potatoes. 3. Stir in garlic, rosemary and thyme. Add carrots, potatoes and tomatoes. Let mixture come to a slow boil. Stir, adjust heat to simmer, cover and cook for 45 minutes or until vegetables are very tender, stirring once or twice. Check the liquid occasionally and, if necessary, add up to 1/4 cup boiling water. 4. Season to taste with salt and pepper. Sprinkle each portion with chopped parsley, if desired.
Valerie411 1y agoVery good! Made a few tweaks- used lamb in place of sausage, substituted a bell pepper for an onion and since I did not have enough tomatoes, I used chicken broth for a liquid. We all enjoyed it!
cteese30 2y agoReally, really good stew. I didn't have fresh herbs so I used dried rosemary & thyme. Instead of fresh tomotoes I used a can of diced tomotoes with chilis. I used 1 lb of mild sausage & 1 lb of spicy sausage. I doubled the garlic & added 1/2 can of beer. It was hearty, the flavor was fantastic & I enjoyed it several times as left-over as well. Really good recipe. I highly recommend it and immediately added it to favorites. Thanks for posting.

chirlytwirly 6y agoI love this recipe. I added some red wine and a little extra garlic salt. Definitely fresh tomatoes, rosemary and thyme over canned and dried. Thanks!
