Airy light rolls served warm. Excellent for ham and swiss sandwiches or make mini ones for hamburger sliders.
Disolve yeast into warm water (100-110F), To proof (foam) yeast stir in 1 tsp of the sugar; let stand 10 min . If mixture doubles in volume, yeast is active.
Heat cottage cheese to lukewarm (100-110F degrees).
Mix all ingredients together. It will be very sticky.
Set dough in warm place (80-85F) to rise for 1 1/2 hrs.
Knead dough, form into 16 rolls and rise again for 30 min.
Bake for 20 min at 350F
I bake these on a pizza stone but you could also use a cookie sheet if you don't have one.
