Suggest a better descriptionPut the butter and sugar into a bowl and beat them until they are creamy.
Stir in the beaten egg and vanilla.
Stir in the zest into the creamy mixture.
Add the flour, salt and baking powder an stir/mix until you get dough.
Put a long piece of foil on wok surface.
Roll the dough to make a long sausage shape.
Wrap the roil around the dough and put in the fridge for an hour, or until firm.
Take the dough out and cut into very thin slices. You don't need to use all go - it'll stay in the fridge for up to 10 days, or in a freezer for six weeks.
Spread the slices on a baking sheet and cook for seven or eight minutes until they are golden in 200C, 400F or Gas Mark 6.
Leave the biscuits on the sheet for one minute them put on a wire rack to cool.
