Comfort Food Dinner
heat oven to 350(F) - prick sausages and roast for 20 minutes turning once. remove and cut into 1/2" slices
heat olive oil in Le Creuset/dutch oven. Add sausage and saute for 5 minutes until brown.
Add garlic for 1 minute
Add tomatoes, red wine, tomato paste, 2 tsp salt, 1 tsp pepper - let simmer over low heat while preparing pasta
half fill pot with water to boil then add 1 tsp salt
add pasta and cook for 9 minutes
while cooking pasta cut broccoli rabe from top crosswise into 2" pieces down to stems (toss stems)
add broccoli rabe to pasta and cook for 3 more minutes
drain in colander (reserve 1/2 cup liquid if needed)
add pasta/broccoli to sauce - add parmesan (and reserved water if needed)
