Use this surface treatment for Flank Steak 1-24h before grilling
In a blender or bowl of a food processor, fitted with metal blade combine all ingredients EXCEPT olive oil and pulse to a puree to a paste, about one minute. With the machine on low speed, SLOWLY add the olive oil until creamy. Taste and adjust seasoning with salt and freshly ground pepper.
This marinade is a nice surface enhancement on, for example inexpensive Flank Steak. Spices and herbs on the surface offers wonderful aromas. The oil conducts heat to the meat surface and helps with browning and crust formation.
