Ready in 15 minutes
This is a great way to add some flavor to brown rice and enjoy as a side dish. You can also add additional vegetables or chicken to make a main dish. This is a low fat, healthy dish.
Boil water then add chicken bouillon, soy sauce, ginger and garlic and let sit.
Saute carrots and onion in olive oil until tender.
Add broth to carrots and onion and bring to a boil. Let boil about 3 minutes
Add rice, cover and simmer for 5 minutes
Remove from heat and let stand for 5 minutes before serving.

SModersohn 1y agoThis was delicious! Instead of using a crock pot, because I didn't have time for that, I put all the ingredients in a Dutch oven and cooked it covered on the stove top for about 35 min. Then u removed the chicken legs, thickened the sauce and put in some broccoli Once that was tender I added back in the chicken and some pineapple chunks. We served it with brown rice and nearly licked that Dutch oven clean. I suspect we will be making this rather often.
