Salad: Orzo with Corn, Green Beans, Tomatoes

This pasta salad has a delicious, bright flavor. It's perfect for summer cookouts.


1 lb Green Beans
1 1/2 cups Orzo pasta
3 ears Corn
1/2 c White wine vinegar
1/2 c olive oil
1/2 cup Shallot
2 tablespoon Dijon mustard
1 tablespoon Tarragon; fresh minced, add to taste
2 cups Cherry tomatoes

Original recipe makes 10 Servings



boil water and trim beans to 2-inch lengths. cook until barely tender, 3-5 min. drain (save water) and immerse in ice water

fill pan with saved hot water and bring back to boil. add orzo and cook until barely tender, 8-10 min. drain and rinse with cold water.

husk corn and cut kernels off

dressing: combine vinegar, oil, shallot, mustard, tarragon and salt/pepper to taste.

Mix pasta with 1/2 c of dressing, layer all ingredients together and save rest of dressing in refrig until serving. Add more dressing as needed...I usually end up with leftover dressing.

One of our favorites for summer. Lasts a good chunk of time in the fridge, too.

Really good. I made exactly per instructions but used 1/4 olive oil instead of 1/2 cup. I loved the orzo! And the corn and green beans were awesome. Next time I would decrease the scallions to less than 1/4 cup as it is a little strong with onion. The tarragon was a great herb with the dijon but I may try some basil next time. It's a strong dijon dressing so if you don't like too much of that flavor, I would decrease the dijon to 1T or less. My husband LOVED the dijon dressing but it was a little strong for me. With a couple small changes I will for sure make this again.

I used canned beans instead of fresh, but it was still tasty but not as colorful. My family loved it. I did also use a honey mustard and a stone ground instead of Dijon because it was what I had on hand. A keeper!
