Easy Chicken Parmesan made in the oven that makes for a Hearty Meal.
1: Fillet Chicken Breast to be roughly 1/4 thick.
2: Beat 2 Eggs in a large flat bottom container. (I beat the eggs in a Coffee mug and pour onto a plate)
3: chop Parsley as fine as you can.
4: Mix breadcrumbs, Parmesan and a pinch of Parsley. Put in another flat bottom container.
5: Preheat oven to 400°F.
6: Dip Chicken Breasts in egg and dip in batter mix. Do This a few times to cover completely. Transfer to a baking sheet covered in tin foil for easy cleanup.
7: Put large pot full of water on high heat. bring to a boil. Add pasta when boiling. Cook till desired tenderness. I over cook mine slightly.
8: mix marinara and spaghetti sauce in a pot, Put on low to medium heat to warm, stirring frequently.
9: Cook chicken breasts For 20 Minutes or so until breading starts to brown.
10: Cover Chicken Breast with sauce mixture. Mix Remaining Parsley and Mozzarella and cover Chicken Breasts.
11: Put back in the oven for another 10-15 minutes.
12: Serve chicken on a bed of pasta. I usually top the pasta with sauce before putting on the chicken Breasts.
This is a pretty easy recipe that delivers a hearty home cooked result. Portions are on the large side, so if you are eating light or have a small appetite it may be 2 servings for you.
