Preheat oven to 475 degrees.
Peel potatoes and cut into long strips, about 1/2" wide. Drop into ice water and chill 1 to 2 hours. Remove strips and dry thoroughly.
Place strip and oil in a gallon sized baggie and toss until all potatoes are coated.
Spread fries in a single layer in a shallow baking pan. Bake 30-35 minutes, stirring occasionally to brown on all sides.
Variations:
Flavor fries with any salt free seasoning such as garlic powder, lemon-pepper seasoning, sesame seeds, cumin or chile powder, or use freshly ground herbs. Add Dijon mustard and paprika to oil in bag and mix. Use peanut instead of Safflower oil.
