Oven Roasted Local Berkshire pork
Pan sear the pork chop and finish in hot oven. cook until internal temperature reaches 145 degrees ( medium well) unless otherwise specified by member.
In a sauce pan sautéed the arugula and sweet potatoes in a small amount of clarified butter, deglaze with white wine and a small amount beef jus
This dish is served on large dinner plate.
Place the starch ( 9 o'clock) and vegetables ( 3 o'clock) and lay the pork chop against the veg and starch. Top with the sweet potato and arugula mixture.
