This is a great side dish for just about any meal.

"My husband and I loved this. I used only squash, zucchini and onion, and added Italian seasoning. He usually grills veggies outside, but when it's so cold we'll do them in the oven from now on."

Ingredients

Are you making this? 
1 med zucchini; sliced
1 med summer squash; sliced
1 med red bell pepper; chopped
1 med yellow bell pepper; chopped
1 pound fresh asparagus; chopped
1 red onion
3 tbsp extra-virgin olive oil
1 tsp salt
1 tsp ground black pepper

Original recipe makes 4

Servings  

Preparation

1. Pre-heat oven to 450

2. Put all veggies into large roasting pan and cover with other ingredients

3. Spread evenly in pan

4. Roast for 30 min.s, stir occasionally until lightly brown

Made this last night. Very good way of eating veggies. I also put some asiago cheese and parmesan cheese on top. Even my 18 year old commented that it was really good.

This was very good. Even my hubby ate a good sized helping, and he doesn't usually eat vegetables.

I felt the zucchini and squash were a little watery. I like the version that replaces them with yams and cabbage better.
