Ready in 40 minutes
This is a great side dish for just about any meal.
1. Pre-heat oven to 450
2. Put all veggies into large roasting pan and cover with other ingredients
3. Spread evenly in pan
4. Roast for 30 mins, stir occasionally until lightly brown

colby_hanson 5m agoI think this is a really good recipe. I made mine a little different though. I cut all of the vegetables into quarters and substituted the asparagus for button mushrooms. turned out good. probably wouldn't quarter the vegetables next time I did it though. the Zucchini and Squash got a bit mushy. I definitely think it turned out better with the mushrooms instead of the asparagus. I like asparagus but it seemed like the odd man out to me and thought mushrooms were a better fit.

nabcoengineer 1y agoOMG. I love veggies anyway but this was a real treat. As the poster says this is a good accompaniment to just about any dish. This night I paired it with sage pork chops. Great recipe and I will make it again for sure.
Field9999 2y agoMade this last night. Very good way of eating veggies. I also put some asiago cheese and parmesan cheese on top. Even my 18 year old commented that it was really good.
