This is a great side dish for just about any meal.

1. Pre-heat oven to 450
2. Put all veggies into large roasting pan and cover with other ingredients
3. Spread evenly in pan
4. Roast for 30 min.s, stir occasionally until lightly brown

nabcoengineer 4 months agoOMG. I love veggies anyway but this was a real treat. As the poster says this is a good accompaniment to just about any dish. This night I paired it with sage pork chops. Great recipe and I will make it again for sure.
Field9999 9 months agoMade this last night. Very good way of eating veggies. I also put some asiago cheese and parmesan cheese on top. Even my 18 year old commented that it was really good.

chadhicks 1 year agoI felt the zucchini and squash were a little watery. I like the version that replaces them with yams and cabbage better.
