Mix the first seven ingredients, mixture will be thick. Add onions, chicken, cheese and mix. Spray an 8x8 pan with Pam. Arrange the split poblano peppers cut side up. Top with chicken mixture. Bake at 350 F for 45-50 minutes.
This recipe is great to use left over chicken or use canned chicken breast for an easy shortcut.
Serve with coffee and the Sunday paper
