Thai stirfry


2 tablespoon vegetable oil
1 tablespoon red curry paste
1 pound chicken; cut into bite size pieces
2 cups green beans
6 kaffir lime leaves; julienned
1 - 2 tablespoons sugar
1 tablespoon fish sauce
1 lime; juiced

Original recipe makes 2 Servings



Heat up the pan or wok until hot. Add oil and wait until the oil is hot and add curry paste. Fry until fragrant under medium heat, about 3 - 4 minutes. Add chicken and saute until chicken is cooked, add green beans and continue to cook until green beans are done. Season with fish sauce and sugar, add kaffir lime leaves and saute about 30 seconds. Serve over hot rice.
