Suggest a better description1. Prepare the pasta according to package directions. Drain, reserving 1/2 cup cooking water.
2. Coat a large nonstick skillet with cooking spray. Add 1 teaspoon oil and heat over medium-high heat. Cook the pasta, pressing down with a large plate that fits inside the skillet, for 3 minutes, or until golden. Coat the top of the pasta cake with cooking spray and invert onto the plate. Add 1 teaspoon oil to the skillet and heat over medium-high heat. Cook for 2 minutes or until golden. Slide onto the plate. Keep warm.
3. Add the remaining 1 teaspoon oil to the pan and heat over medium-high heat. Cook the scallions and ginger for 1 minute. Add the broccoli, mushrooms and water. Cook, stirring frequently, for 5 minutes, or until the broccoli is tender-crisp. Remove to a bowl.
4. Coat the skillet with cooking spray. Working in 2 batches, cook the beef for 4 minutes or until browned. Remove to the bowl with the broccoli mixture.
5. In a medium bowl, whisk together the orange juice, oyster sauce, soy sauce, cornstarch and the reserved cooking water until smooth. Add to the skillet and cook, stirring frequently, for 2 minutes, or until the mixture boils. Stir in the broccoli mixture. Cook for 2 minutes or until heated through. Spoon over the noodle cake.
