I found some sorrel in my northern Colorado garden. Delicious; melts in your mouth. From Joy of Cooking 1997.
Combine in a saucepan: dry white wine or rice wine
vinegar
water
celery stalks, coarsely chopped
carrot, coarsely chopped
onion, quartered
garlic
fresh thyme or dried
parsley
sage leaves, or generous pinch of
dried
tomato paste
Bring to a boil over medium-high heat, then reduce the heat to low. Cook, covered, for 20 minutes. Strain through a sieve, pressing the solids to release all of their juices. Return the liquid to the saucepan; there should be about 1/2 cup. Over very low heat, gradually whisk in:
8 tablespoons (1 stick) butter, softened, cut into pieces
Season with:
Salt and ground pepper to taste
Stir in:
2 cups fresh sorrel, washed, tough stems removed, torn into 1-inch pieces
Keep warm. Prepare pan grilled fish fillets or steak
Serve with:
Boiled potatoes
Spoon a bit of the sorrel sauce over all.
