Oil and start two pans on high. Scoop flour and oats, baking soda and put in bowl. Mix and make a well. Then add eggs, oil, buttermilk, fruit [cranberries halved, Craisans, or dried apricots diced] and walnuts in center. Mix well and put in 1/4 c dough for each pancake. After this recipe you will never have to use white flour for pancakes again. Can use 1 1/2 tsp vinegar in 1 1/2 c milk in place of buttermilk. No adjustments neceassary for high altitude 3500 to 6500 feet.
