Turn your kitchen into a pancake house with these five delicious flavors.
In mixing bowl, stir together flour, sugar, baking powder, salt.
In another mixing bowl, combine egg, milk and cooking oil.
Add to flour mixture all at once.
Stir mixture just until blended but still slightly bumpy.
Pour about 1/4 cup batter onto hot, lightly greased griddle or heavy skillet for each standard size pancake or about 1 tbs batter for each dollar sized pancake.
Cook until pancakes are golden brown, turning to cook 2nd sides when pancakes have bubbly surfaces and slightly dry edges.
Buttermilk pancakes: Prepare as above, except reduce baking powder to 1 tsp and add 1/2 tsp baking soda to flour mixture, substitute buttermilk or sour milk for milk. Add additional buttermilk to thin batter, if necessary.
Buckwheat Pancakes: Prepare as above, except substitute 1/2 cup whole wheat flower for 1/2 cup buckwheat flour for the all purpose flour, subsitute brown sugar for the sugar.
Nutty Orange Pancakes: Prepare as above, except add 1/2 tsp baking soda, 1/2 tsp ground cinnamon to the flour mixture. Substitute orange juice for milk. Folk 1/2 cup finely chopped nuts into batter.
Sourdough Pancakes: Prepare as above, except add 1 1/4 cups Sourdough Starter, to room temp. Reduce baking powder to 1 tsp and add 1/2 tsp baking soda to flour mix. Substitute the 1 1/4 cups room temp of sourdough starter for the 1 cup of milk.
