Papaya grows almost like a weed on the farm. It is great to walk out into the garden, pick a fresh papaya, cut it up with a squeeze of lime or a bit of yoghurt- a very nice way to start the day. This is a great recipe for slightly over ripe papaya.
Cube the papaya and tomatoes and toss in the rest of the ingrediants. The Jalapeno is optional but adds an extra zing - bottles of jalapeno are sold in the local market. Cilantro sometimes grows on the farm but is also sometimes available in the market. Basil can be used if cilantro isn't available. Serve on baguette style bread or crackers - both available in the local market.
This is a treat for all ages - especially sometimes hard to please teenagers. Makes a nice addition to any meal and can be served as a salad.
