Tasty with bacon and eggs, or with pork chops, or sausages.
Peel the parsnips, trim both ends and cut into even sized chunks. Put them into a saucepan and add enough cold water to cover. Salt lightly and bring to the boil. Cook for just 3 minutes, then drain and leave until cool enough to handle.
Coarsely grate the parsnips into a large bowl. Peel the apples and grate them into the bowl with the parsnips. Add the egg, flour and plenty of salt and pepper and mix well.
You'll need to cook the cakes in batches. Heat a non-stick frying pan over a medium heat and add enough oil to give about a 2mm depth. When it is hot, take a heaped dessertspoonful of the parsnip and apple mixture and drop into the pan, forming it into a rough patty shape with a spatula. Add several more spoonfuls, without overcrowding the pan.
Cook for 8 - 10 minutes, turning carefully once or twice, until golden brown and crisp.
