Jeris's Recipe for a holiday cake with no leavening
Preheat oven to 350 degrees. Grease a 10-inch springform pan. Line the bottom with parchment or wax paper and grease the paper. Evenly coat the bottom and side with flour, tapping out any excess. Grind almonds until fine in food processor. Add the sugar, flour, salt, and cinnamon.
In a bowl, beat the eggs, wine, and orange juice. Gradually add the flour mixture. Then, in a clean bowl, beat the egg whites. Gently fold them into the mixture, stirring lightly. Pour mixture into the springform pan and smooth the surface. Bake the cake for about 45 minutes, or until a toothpick inserted in the center comes out clean. Run a small, sharp knife around the side of the cake, transfer it to a rack and let cool completely in the pan. Remove the side of the pan and invert the cake onto a serving plate. Remove the base of the pan, then carefully peel off the paper. Cool completely.
Whip the cream and gradually add the powdered sugar sugar. Frost the top of the cake with the whipped cream. Serve immediately, or place in refrigerator to chill.
