Pasta- Spinach, Tomatoes & Gorgonzola

1 pound pasta
1 teaspoon Olive oil
1 cup Cherry tomatoes
1/2 teaspoon Salt
1/4 teaspoon Crushed red pepper
1 clove Garlic; minced
1/2 cup Half-and-half cream
6 tablespoon Gorgonzola cheeze; crumbled
3 cups Spinach
1 Roast Chicken; meat shredded

Original recipe makes 4 Servings



cook pasta and drain. while it cooks, pull pieces of meat off chicken.

heat olive oil in large nonstick pan over med heat. Add tomatoes, salt, pepper, garlic and cook one minute, stirring occasionally. Stir in half and half and cheese and cook 2 min or until slightly thick, stirring constantly. Stir in spinach and pasta, cook 1 min or until spinach wilts.

Add chicken meat and serve.
