Pasta- Wild Mushroom, Chicken and Spinach Farfalle

Great weeknight meal


1 lb Farfalle; bow tie pasta
1 tablespoon Butter
8 oz Mushroom; exotic presliced blend (shittake, oyster, etc)
1/2 c Onion; chopped
1/3 cup Shallot; chopped
1 tablespoon Garlic; minced
1 1/2 teaspoon Salt
1/4 teaspoon Black pepper
1/4 c White wine
2/3 c Whipping cream
1/2 cup Parmigiano-Reggiano; grated
2 tablespoon Parsley; fresh, chopped
2 cup Chicken; shredded from roasted chicken
6 ounces Spinach

Original recipe makes 4 Servings



1. Cook pasta and drain.

2. Melt butter in large nonstick skillet over med-high heat. Add mushrooms, onion, shallots, garlic, 1 teaspoon salt, pepper, cook 12 min or until liquid evaporates and mushrooms are tender, stirring constantly. Add wine, cook 2 min or until liquid evaporates, stirring occasionally. Remove from heat.

3. Add cooked pasta, whipping cream, cheese, 2 tablespoons parsley, tossing gently to coat. Stir in remaining 1/2 teaspoon salt. Garnish with minced fresh parsley, if desired.

Add in pieces of chicken and spinach, if desired.

I used portabella mushrooms & cooked chicken, which i removed before cooking mushrooms & onions. Definitely need to cut amount of spinach by at least half & add in about 5-7 minutes before dish is finished for proper wilting. Still a great dish, very easy to make.

Good stuff. The cream sauce isn't too heavy, didn't overwhelm the other flavors. I used oyster mushrooms, which really didn't pop, so I may try some other variety next time. Great recipe, though.

It was very easy make it. Spinach and chicken should be added the last 5 minutes. Very yummy!
