1 lb Ricotta cheese
1 c Heavy cream
1 lb Pasta; (shells, bows etc
1 c spinach; Cooked and chopped
1 sm Onion; minced
2 tb Sweet butter
1/2 c Grated Parmesan; fresh

Original recipe makes 1


Preparation In a saucepan saute the minced onion in butter. Add the cooked spinach, heavy cream and ricotta. Stir and cook for about 3 minutes. Combine cooked and drained pasta with spinach/cheese mixture and toss with Parmesan cheese. Serve immediately. Serves 4 Posted to recipelu-digest by LSHW on Feb 19, 1998
