Pasta Primavera

Healthy pasta dish loaded with veggies.


6 Cups Penne pasta; Whole wheat
1 Jar Marinara sauce; Barilla
2 Cups Yellow squash; Chopped
2 Cups Zucchini; Chopped
1 Can Artichoke hearts; Quartered
1/2 Cup Green olives; Chopped
1 Clove Garlic; Minced
1 tablespoon Dried oregano
1 Cup Parmesan cheese; Shredded

Original recipe makes 4 Servings



Combine marinara, veggies and spices in a large skillet. Simmer until zucchini is soft.

Serve over cooked penne pasta. Sprinkle with Parmesan cheese to taste.
