In a large frying pan drizzled with oil, sauté sausage on medium heat. When sausage is nice and browned, add apples. Cook about 5 minutes.
Add in cream and 1/4 cup pasta water; stir. Toss in pasta and mix well. Remove from heat and add cheese a little at a time while stirring.
Serve with additional cheese if desired.
