Pasta with Sausage, Fennel & White Truffle Oil

White truffle oil is what makes this recipe go from ordinary to extraordinary!


8 oz dried pasta
1 lb sweet italian sausage
2 tbsp olive oil
1 small onion; dice
2 cloves Garlic; minced
1 bulb fennel; sliced
1 cup baby bella mushrooms; sliced
2 tbsp fresh parsley; chopped
salt & pepper; to taste
White truffle oil; to finish
parmesan reggiano cheese; grated

Original recipe makes 6



Cook pasta according to package directions. Meanwhile, cook sausage throughly over med hi heat. Drain and set to the side. In a skillet, over med heat, add the olive oil. Saute the onions, fennel and garlic until the onion is translucent. Add mushrooms and saute until mushrooms are tender. Return sausage to pan, add parsley; salt & pepper to taste.

Plate pasta, top with meat mixture, drizzle with truffle oil and grate parmesan over top.

An excellent, easy, no-fuss recipe. I followed it with no substitutions and the results were wonderful! The combination of sweet Italian sausage, fennel bulb and truffle oil complement each other exceptionally well. We will definitely be making this again!

Try replacing the sausage with guanciale or pancetta and add spinach to the last cooking phase. [I posted this recipe.]
