Basic pasta recipe for making noodles.
Mix, by hand, egg and semolina until the egg is incorporated. Add water sparingly and continue to mix until dough becomes stiff but pliable. Knead dough for 10 minutes, adding semolina flour or water as needed to maintain a stiff yet workable consistency. Roll flour into a ball, wrap in saran wrap and refrigerate for 30 minutes. Remove dough from saran wrap and form into noodles as desired. A pasta roller or rolling pin may be required for flat noodles, a pasta extruder may be required for formed noodles.
