Ripe Plantains
1- Prepare Ground Meat-cook with chopped onion,green pepper, chopped olives,garlic,salt & pepper
2-On a flat skillet or frying pan-coat with butter or olive oil and lighltly pan fry the sliced plantains just so that they are somewhat soft-golden-do in separate batches & place aside when done
3-Bechamel Sauce Preparation-in a skillet sautee the chopped onion in 1/2 stick of butter, add a dash of salt/pepper & cook 5 minutes
then add 1/3 cup of flour,stir/wisk together, add 1 tblsp cumin, mix, add 1 3/4 cup chicken broth and 1 cup of milk, Cook & whisk until creamy
Add 1 cup shredded cheese until melted and set pan aside

4-Buter a casserole dish-Layer some of the Plantains on the bottom, top with Meat Mixture, Top with some Cheese Sauce,
Top with Plantains, meat, cheese sauce, repeat as many times and end with plantains, cover with the sauce and top with some shredded cheese
Cover with Alum foil and bake in oven at 350 for 1 hour,remove foil the last minute so that the top is golden
Cut in squares and enjoy!
I usually serve this dish with green beans and italian or french bread (**I NORMALLY DOUBLE THE SAUCE RECIPE TO MAKE SURE THAT THE RECIPE/PLANTAINS ARE CREAMY AND DOESN'T DRY OUT)
