Huge juicy burgers with an herbed butter center.
Make the herbed butter ahead of time:
1. Put all ingredients in blender or food processor and pulse until smooth.
2. Transfer to sheet of plastic wrap, roll into a log, freeze until firm.
Burgers:
1. Prepare fire in charcoal grill
2. Divide the beef into six equal balls.
3. Slice the butter log into six pieces. Bury one piece in the center of each meatball. Flatten each ball into a patty about one inch thick.
4. When the coals are medium hot, place the burgers on the grill and cook for about five minutes each side. Flip over, cover with a slice of cheese, and cook for another five minutes or until the cheese melts and the burgers are medium rare. Cook longer for medium or well-done burgers.
5. While the cheese is melting, place the buns split-side down on the grill to lightly toast them.
Prepare other condiments and toppings ahead of time. Substitute other cheeses if desired (Swiss, cheddar, havarti).
