Suggest a better descriptionHeat the oil in a large frying pan over a medium heat. Add the onion, season well with salt and pepper and fry gently for 10 minutes until soft and golden. Add the courgenes and garlic and cook, stirring regulary for 15-20 minutes until the courgettes are completely cooked. Make sure that any liquid the courgettes release is cooked off. Stir in the peas and herbs, cook for another 1-2 minutes then remove from the heat and set aside to cool sltghtiy.
Preheat the oven to 180 C. Generously butter four 200ml ramekins and line the bases with baking parchment (this prevents the timbales sticking to the ramekin bases) Coat the ramekins well with the breadcrumbs, discarding any excess crumbs.
Lightly beat together the eggs with cream and stir in the Parmesan. Season lightly and add t the cayenne pepper. Mix the egg mixture and the pea mixture together and spoon into the prepared ramekins.
Place in a baking dish and pour in boiling water to come halfway up the sides of the ramekins.Put in the oven and bake for 45 minutes or until golden and firm. Remove from the owen and rest for 10 minutes. Run the tip of a sharp knife around the edge of the timblas, tip them out, then turn right way up again so golden tops are uppermost. Serve warm with salad of small mixed green leaves, or with a fresh tomato salad.
