Pea and Ham Soup with minted creme fraiche
Soften onion in butter over a low heat in a large saucepan.
Add stock and bring to boil.
Add peas & simmer for 3 mins, or until cooked.
Season with salt, pepper & sugar & liquidize.
Add ham & warm through.
While warming, combine shredded mint leaves & creme fraiche.
Top each bowl with some creme fraiche.
