Suggest a better descriptionIn a medium pot, put olive oil, shallots, leek and garlic. Saute for 3 minutes.
Add potato, peas and coconut cream and 700ml water and simmer for 10 minutes.
Add mint, salt and black pepper, cook another 10 minutes.
Puree the mixture using a hand blender.
Serve in a soup bowl, sprinkle some italian herbs.
