Light and easy summer cake - almonds and coconut base with peaches on top
Mix all the ingredients for the base in the food processor. When still in crumbled form take 3 table spoons of mixture out of it and save for later. Continue mixing the rest for another few minutes.
Take it off and place it into a round baking tray (# 26). Press firmly. Put the crumbles onto a second tray. Bake both at 180 degrees till colour is brown for approx. 10 min. Cool down.
Meanwhile mix all the ingredients for the filling (except the peaches!).
Pour the filling (without the peaches!) on the base. Spread evenly.
Arrange nicely halves of the peaches on top. Sprinkle with the crumbles from second tray.
Serve cold.
PS Be careful that juice from the filling can leak through the base.
