This is a favorite dessert among Southerners.
In large bowl mix together all ingredients except pie crust. Unroll one of the pie crust and cut into squares. Add into cobbler mixture and fold into peaches. Take two more piecrust and unroll them. Cut into equal strips. Place strips into bottom of ungreased baking dish. Using the under and over method, repeat this process until finished. DO NOT TRIM OFF OVERHANGING PIE CRUST! Pour in peach mixture and spread evenly. Take remaining strips and place over cobbler using the over and under method (also known as the lattice method). Fold overhanging strips of bottom pie crust to the edges of top. Dust dough strips with sugar. Bake uncovered @350 for 1 hour.
DO NOT PLACE ALL THE STRIPS AT THE BOTTOM OF THE DISH! I suggest using Dole brand peaches in heavy syrup and Imperial or Dixie Crystals brand sugar. For a more diabetic cobbler, decrease sugar by 1 cup and increase juice by 1/4 cup. Great also!
