One of our favorites - because it's so easy and delicious.
Cut pork loin into 3/4 " pieces.
Cook pasta according to directions.
As pasta is cooking, combine taco seasoning and parsley in plastic bag or bowl. Add pork pieces to coat.
Heat oil in heavy skillet over medium high heat. Add pork and cook until browned. Lower heat and add salsa and preserves. Stir to combine and heat through. Serve atop pasta.
