Sound weird? It'd delicious! Melty peanut butter and bananas in a crispy fried egg roll wrappers.
Preheat oil in a deep frying pan 375 degrees.
Place 4 egg rolls wrappers on a clean work surface. Smear one tablespoon of peanut butter on each wrapper, starting at one corner and going catty-corner from it. Take one half of banana and place it across the peanut butter. (Make sure there is at least 1.5"- 2" of space left at each corner from the banana.)
Wrap the shorter corners over the banana, toward the middle. Take one of the free corners, and fold that over the banana toward the remaining free corner. Wet the edges of the free corner with some water using your finger, then roll the banana up tightly into that corner. Continue until you have four egg rolls.
Fry in oil on both sides until the wrap is golden brown, bubbly and crisp. (Maybe 5 minutes.) Remove to a paper towel to let drain and cool.
(I also plan on doing this with apple pie filling and vanilla ice cream. ;) )
