You'll never need to order satay chicken take-out again - this version is simply delicious and very easy to cook!!! Make this when you want to impress!
Preheat oven to 180 degrees Celsius.
Combine nuts, salt, curry powder and Chinese five spice in food processor and process until mixture resembles fine breadcrumbs. Mix in 1 tablespoon peanut oil and 1/3 cup peanut butter and press mixture onto one side of chicken.
Heat one tablespoon peanut oil in a frying pan over medium heat. Cook chicken (non-peanut encrusted side down) until brown, and then transfer to the oven for 15-20 minutes or until cooked through.
Meanwhile, heat remaining oil in a saucepan over a medium heat. Add the chopped onion and garlic. Sauté until soft.
Add remaining peanut butter, coconut milk, sugar and lime juice. Stir until smooth. Cook, occasionally stirring for around 5 minutes or until the sauce begins to simmer.
Serve chicken on bed of steamed rice and mixed Chinese greens and pour the sauce over the top.
Keep an eye on your chicken when in the oven as you do not want the crust to burn!
