Suggest a better descriptionPreheat oven to 375 F. Cover a baking sheet with foil and spray or lightly oil it. In a large bowl, combine mashed sweet potatoes, corn flake crumbs or cracker meal, eggs, dried herbs, salt, and pepper. If the mixture seems too wet to hold together, add more cornflake crumbs or cracker meal. With your hands, form into eight flat patties and gently press them into the crushed peanuts until they are coated. Place patties on prepared baking sheet and bake about 25 minutes, until they are set and lightly browned. By "Karen C. Greenlee"
