Light and Fruity Chicken
Each of breasts slice along long axis and open up like butterfly
Inside each piece of chicken put 1 slice of pear, 1 slice of provolone and 1 branch of tarragon (make sure tarragon’s stem is sticking out so that it can be later removed easily. Close. Repeat as many times as necessary.
Pour apple juice in a flat backing shape (glass) and arrange chickens in the form.
Bake at 350 for 50 mins.
Take out, remove tarragon.
Put another slice of provolone atop of each chicken, and return to the stove for 10 more mins to allow cheese to melt.
Serve with white fluffy rice on the side.
