Heat fry pan and lightly saute' on one side.
Place on cookie sheet and bake at 450 degrees for 4-5 minutes. Check with fork in middle for flaking.
Serve with fresh Mango Salsa
2 ripe mangos, skinned and cubed
1/2 red onion diced small
1 tsp orange zest
1 bunch chopped cilantro
1 finely diced poblano pepper
1 diced red bell pepper
shot of O.J. and red wine vinegar
